Tim Staples and the lobstermen
of the Pine Point Co-op have been
running their facility for over
30 years. The co-op is made up of
about 15 local lobstermen who bring
their catch in daily and sell wholesale
and retail through their pound in
Scarborough. They have moderate
sized natural seawater holding tanks
that tops out at 8,000 lbs but Tim
notes they never run it that full.
To insure quality, Pine Point rotates
their stock about every 3 days,
so you know these are really fresh
lobster. The coop lobstermen pull
traps all year long so you can be
assured of a good supply available,
even in winter. A real selling point
for us is that Pine Point ships
their lobsters in “slot boxes” –
boxes that resemble wine boxes,
with each lobster getting their
own slot. By separating them like
this, it provides the maximum protection
and gives the highest assurance
that the critters arrive alive,
even in the summer shedding season
when they are more fragile. Their
boxes include bibs, cooking instructions
and placemats. They also have steamers
for sale that the rakers dig right
in the clam flats outside their
window. The web site says a minimum
purchase of 4 lobsters but Tim says
just ignore it. He’ll get around
to changing that soon. A top quality
