Maine Lobster Creole

Ingredients:
  • 1 ounce olive oil
  • ½ slice medium red onion
  • ½ slice medium green pepper
  • ½ slice medium red pepper
  • ½ slice medium tomato
  • ½ teaspoon lobster base/li>
  • ½ cup water
  • 6 ounces lobster meat -- tail and claw
  • ½ teaspoon chopped garlic
  • ½ ounce red hot sauce
  • 1 teaspoon Cajun seasoning
  • 2 Tablespoons non-fat sour cream
Preparation:

Heat oil in sauté pan to medium heat. Add onion, peppers, tomato and sauté 5 minutes. Add Maine Lobster base to water until dissolved. Transfer to sauté pan. Add Maine Lobster meat, garlic, red hot sauce, Cajun seasoning and simmer 3 more minutes. Stir in sour cream until desired consistency. Serve over white rice.  

Note: This is the single serving size recipe. Simply increase portions by the number of people to be served.
