Maine Lobster With Champagne Dipping Sauce

Ingredients:
  • 4 (1.5 pound) Maine lobsters
  • 1 bottle dry champagne
  • 1 cup fresh parsley, chopped
  • 1 small bunch thyme, chopped
  • 1 bay leaf
  • 4 shallots, chopped
  • 3/4 cup butter, unsalted
  • salt and pepper to taste
Preparation:
  1. Cook your Maine lobster.
  2. Place champagne, herbs and shallots in a medium saucepan, and cook over medium heat for 25 to 30 minutes.
  3. Slowly whisk in the butter and lower heat.  Add in the salt and pepper. 
  4. Scoop into small dipping dishes and serve your Maine lobsters.
