Maine Lobster With Champagne
Dipping Sauce

Ingredients:
- 4 (1.5 pound) Maine lobsters
- 1 bottle dry champagne
- 1 cup fresh parsley, chopped
- 1 small bunch thyme, chopped
- 1 bay leaf
- 4 shallots, chopped
- 3/4 cup butter, unsalted
- salt and pepper to taste
Preparation:
- Cook your Maine lobster.
- Place champagne, herbs and shallots in a medium saucepan, and cook over medium heat for 25 to 30 minutes.
- Slowly whisk in the butter and lower heat. Add in the salt and pepper.
- Scoop into small dipping dishes and serve your Maine lobsters.
