Boiled Jim Graffam Style

Jim Graffam knows his
lobsters. He and his family have been selling
lobster from their pound situated on Rockport
harbor for about 60 years. I don’t know
how he gets any work done with the view
he has of that beautiful harbor. Jim is
a real Yankee – a straight talker of few
words and a dry humor. He’s one of our favorite
lobstermen and if Jim says boil your lobster
with wine, then you should try it. Save
me a few, Jimmy.
Ingredients:
- 2-4 Lobsters
- 1 Cup White Wine
- 1 Large Pot of Water (Large enough
to submerge lobsters)
Preparation
Bring the water, with the wine added, to
a full boil. Drop the lobsters in the water,
head first. Once the water comes to a boil
again, cook the lobsters for 15-20 minutes,
depending on size. If the lobsters are over
2 pounds each, boil them for an additional
5-8 minutes.
